Preptime: 15 minutes
Preheat oven: 350 degrees F; do not use convection setting for these
Note: If using whole wheat flour, use a bit less! Mixture should be slightly wet (not sticky).

- 1 Cup Sugar
- 1/4 Cup Blackstrap Molasses
- 1 Egg
- 1 1/2 Teaspoon Cinnamon
- 2 Teaspoons Baking Soda
- 1 Pinch Salt
- 2 1/2 Cups Flour
- 1 Teaspoon Ginger
- Beat well oil, sugar, molasses, and egg for 1-2 minutes. Sift cinnamon, soda, salt, flour, and ginger and add in batches to first mixture. Mix well. Form into smooth balls (golf ball size or smaller if desired). Place on un-greased cookie sheet. Bake for 8-10 minutes on a non-convection setting of 350 degrees F. Let fully cool before removing. Makes 24 small cookies or 12 large ones.
Maw-Maw’s tip: Best served after a meal of fried chicken, corn, mashed potatoes, buttered rolls, and milk.
